Cardamom Brioche

Une Petite Brioche 🧡 à la cardamome

The best breakfast there is. With a good spread of butter. And a strong coffee with milk. Une brioche très fluffy, indeed.

200 g white flour type 00

100 g strong white flour

Approx 5g dry yeast

7g salt

1/2 tsp cardamom powder, or coarse

50g sugar

100ml milk

4 eggs, lightly whisked

150g butter, room temperature and in cubes

1 extra egg for eggwash

(Use either a kitchen machine with a dough hook, or knead with a wooden spoon in a big bowl).

Mix dry ingredients (apart from the salt) in a bowl. Stir salt into the milk and pour over the flour together with the eggs. Mix vigourously for a couple of minutes. While you’re stirring/kneading the dough, add a couple of butter cubes at a time. Do this for about 5-8 minutes, until all cubes are blended and the dough is smooth and stretchy. The dough will be quite sticky and wet. Add some oil and use a silicone spatula to release the dough from the inside of the bowl. Cover with clingfilm and prove for an hour. Fold the dough a couple of times in the bowl, cover again and leave in the fridge overnight.Have plenty of flour on the bench and roll 8 buns and place on a lined baking tray. Prove for another 40mins. Whisk an egg and brush the buns before you bake them at 190 degrees C for about 15-20 min. Voilà, votre petit déjeuner est prêt!
